The Vegetarian Wonton Soup Recipe is one of the easiest, healthy quick soups to make when you have the dumplings/wontons also known as momos ready. The wonton soup is special to my heart and revives all my memories of childhood. During late monsoon season and winters, my mother used to make this special vegetable soup with wontons and we, as a family, used to wait for those special Friday nights.

What is wonton?

Wonton, also known as dumpling/momo, is a dumpling stuffed with cabbage, carrot, ginger, onion and other spices. The stuffing is wrapped up in a super artistic designs which are further steamed and enjoyed with spicy tomato chutney. The stuffing can have many versions like paneer (cottage cheese), veggies, chicken or sea food too. Also the designs of outer covering of wonton also vary from place to place.

How to cook wontons?

Wontons can be steamed, deep fried or baked. Sometimes, people cover wontons in tandoori sauce and cook it. Today this recipe is about steamed wonton (our personal favorite).

Dough

Wonton’s outer covering is made up of all purpose flour (maida). The dough has to be kneaded stiff or hard. Also another healthy version of this recipe is wheat wontons or whole grain wontons.

Time required to make wontons

Wontons take really good amount of time from scratch to steaming dumplings. So if you have enough time in hand, then start making it. Also if you have a helping hand then time will certainly reduce. I had my two little kids a.k.a monsters helping me so I took around 2 hours to make everything depending upon the kitchen gadgets and working environment at home.

Taste

Wontons taste heavenly balanced in vegetable soup. Steamed wontons are super juicy and soft with vegetables stuffed inside it. Pour steaming hot vegetable soup on these juicy wontons and it really tastes very good.

Tips

  1. Wontons dough should be kneaded firm. After resting of dough, it is perfectly ready for making wontons’ outer covering.
  2. Making vegetable stock beforehand or as a meal prep really saves a lot of time.
  3. Here I have made no onion garlic vegetable stock. If you want, you can add both onion and garlic in vegetable stock or soup.
  4. If steamer is not available at home, then just take a big vessel with water in it and place any plate on top of the pot and put wontons on the plate. Wontons will easily get cooked on the plate in steam.
  5. While make stuffing for wontons, you can use any vegetables of your choice as stuffing in wontons.

Ingredients

Wonton Sheets


  • All purpose flour (maida) - 2 cups
  • Salt - 1 tsp
  • Ice cold water
  • Steamer

Vegetable Fillings for Wontons


  • Cabage (grated) - 1 cup
  • Carrots (grated) - 1/2 cup
  • Bell pepper - 1/2 cup
  • Ginger (grated) - 1 inch
  • Salt - 1/2 tsp
  • Black pepper powder - 1/2 tsp
  • Oil - 1 tsp

Vegetable Wonton Soup


  • Spring onions (white part) - 2 tbsp
  • Bell peppers - 2 tbsp
  • Orange sweet peppers - 2 tbsp
  • Ginger (grated) - 1/2 inch
  • Corn (frozen or fresh) - 2 tbsp
  • Salt - 1/2 tsp or to taste
  • Black pepper - 1/4 tsp
  • Vegetable stock - 2 cups
  • All purpose flour (maida) - 1 tsp

Instructions

Wontons outer covering - Preparation Steps

  • Add all purpose flour and little salt to a bowl.
  • Knead the dough with ice cold water to make a firm dough.

  • When the dough comes together, stretch the dough with the help of arms. This will increase gluten in dough which in turn make soft and juicy momos.

  • Rest the dough for at least 30 minutes. Cover the dough with a wet cloth or a cling film so that it does not get dry.

Vegetable Filling for Wontons - Preparation Steps

  • Take grated cabbage, grated carrots, bell peppers, grated ginger to a mixing bowl.
  • Add salt, black pepper and oil to veggies and mix it well.
  • Rest veggies for 15 minutes.

  • After 15 minutes, take a muslin cloth on a bowl and place veggies on muslin cloth.

  • Squeeze water from the veggies. This will prevent the momos to break while steaming. Do not throw the left over water from veggies. You can use this water in making any lentils or veggies or even while spicy tomato chutney (our next step).
  • Our Vegetable filling for momos is ready.

Wontons - Making shapes

  • After resting the dough, take a small ball and make a big flat roti (bread) out of it.

  • Take a knife. Make cuts on roti. Market style wonton sheets are ready.

  • Put water on the outer part of rectangular sheet. Add vegetable filling.
  • Pinch the two sides to cover the filling.
  • Wontons are ready.

Wontons - Steaming

  • Place a steamer on the burner.

  • Apply oil on steamer so that wontons do not stick.

  • When steam starts to come out from steamer, place all the wontons on the steamer. Steam wontons for 15 minutes in the steamer.

  • After 15 minutes, the wontons are ready.

Wonton Soup - Preparation

  • Add white part of spring onions to oil.

  • Add bell peppers (capsicum), orange sweet peppers (colored capsicum), grated ginger, corn.

  • Add salt and black pepper to vegetables. Mix well.

  • Add vegetable stock to vegetables. If vegetable stock is not available, then take a big pot dump all vegetables, salt, oil and water. Let this vegetable and water cook for 20 to 25 minutes. Strain it and left out water is vegetable stock. Do not throw the vegetables. You can use it by making puree and mix it in wheat flour for making parathas. There are many other uses of these vegetables.

  • Let’s make a slurry for thickening this soup. Take 1 tsp of all purpose flour and add 2 tbsp of water. Mix well and slurry is ready.
  • Add slurry to soup.

  • Cook for another 5 minutes. Our delicious warm wintery wonton soup is ready.
