Moonglet, a.k.a. Moong Dal Chilla is a scrumptious North Indian food with full of fiber & high protein.

Overview

Moonglet is a fluffy pancake made from split mung beans and topped like a pizza with vegetables, seasoning and cheese. Moonglet is gluten free. This recipe can be adapted to suit a vegan diet and a Jain diet. Feeding the dish to kids is also considered to be good, as moong dal is a great source of protein and fibre.

Tips

  • To adapt the recipe to a vegan / plant-based diet, use only vegetables or use tofu for the topping. You can either skip the cheese or use vegan cheese.
  • To adapt the recipe to a Jain diet, skip the ginger in the batter. You can replace it with asafoetida or hing.

Ingredients

  • Moong Dal 1 cup
  • Ginger 1 inch
  • Green Chili 1-2 portion
  • Salt to taste
  • Tomato sliced 1 tbsp
  • Bell pepper (capsicum) sliced 2 tbsp
  • Sweet peppers sliced 2 tbsp
  • Carrots grated 2 tbsp
  • Corn boiled 2 tbsp
  • Red chili powder 1/2 tsp
  • Dry mango (amchur) powder 1 tsp
  • Chaat masala 1 tsp
  • Eno or baking soda 1 tsp
  • Butter 1 tbsp

Directions

  1. Moong Dal Batter
    • Clean and seive the moong dal with water.
    • Soak 1 cup moong dal for 4 hours.
    • Blend the moong dal along with 1/2 inch ginger, chilli and salt to taste.
    • Transfer the batter into a big mixing bowl.
    • Add vegetables
      • Diced tomato 2 tbsp.
      • Green bell pepper 2 tbsp.
      • Sweet bell pepper 2 tbsp.
      • Grated carrots 2 tbsp.
      • Corn 2 tbsp.
    • Add spices
      • Salt to taste.
      • Coriander powder 1 tsp
      • Dry mango powder 1 tsp
      • Red chilli powder 1 tsp or to taste
      • Chaat Masala 1 tsp
    • Mix the vegetables and spices.
    • Add the slight water to smoothen the consistency.
    • Add ENO or Baking Soda to get the fluffy texture.
  2. Moonglet
    • Greese the flat pan with 1 tbsp butter.
    • Add moong dal batter in the center and let it flow to the sides.
    • Pour 4 to 5 laddle based on the pan size so that moonglet cover the pan sides.
    • Add butter to make it crispy and cook from both sides.
    • Moonglet is ready, transfer to serving plate.
  3. Condiments for Moonglet
    • Green Coriander & Mint Chutney
    • Dates & Tamarind Chutney.
