What is Litti Chokha
Litti is the stuffed whole wheat dough ball and Chokha is a mashed relish that is served with litti. Chokha can be made with roasted eggplant (baingan), boiled or roasted potatoes (aloo) and roasted tomatoes (tamatar). You can make them separately or even combine all three and make one chokha. You can even combine the baingan and tomatoes and make one chokha and make a second one with potatoes.

Litti Dough Ingredients

- Water | to knead the dough |
Raw Chokha Recipe
- Eggplant | 1 big | |
- Oil | for dressing | |
- Tomatoes. | 2 big | |
- Boiled Mashed Potatoes | 1 cup | |
- Salt | 1tsp or to salt | |
- Green Chilli | 1 portion or 1 tsp roughly cut | |
- Ginger | 1/2 inch | |
- Mustard Oil | 2 tsp | |
- Coriander leaves | to taste for garnish |
Cooked Chokha Recipe
- Oil | 2 tsp | |
- Ginger paste | 1 tbsp | |
- Turmeric | 1/2 tsp | |
- Red Chilli Powder | 1/2 tsp | |
- Peas, boiled | 1/2 cup | |
- Asafoetida (Heeng) | 1/2 tsp | |
- Raw Chokha Mixture | prepared above |

- Grams (Sattu) | 1/2 cup | |
- Ginger | 1 inch | |
- Coriander (dhaniya) leaves | to taste | |
- Pickle (achaar) masala | 1 tsp | |
- Salt | to taste | |
- Green Chilli, roughly chopped | 1 tsp or to taste | |
- Oil | 2 tsp | |
- Water | 2 tbsp |
Instructions
Recipe for Litti Dough
Litti Chokha is a Bihari recipe, which is extremely easy to put together and can be a nice wholesome delight for Bihari Cuisine lovers. Here’s how you can prepare this dish by following these simple steps. – To prepare the dough, take a mixing bowl and add wheat flour, mustard oil, a pinch of salt, ajwain seeds and ghee in it. Add some water and knead a soft dough.
Litti Stuffing Recipe
To prepare the filling, take a bowl and mix sattu (black gram flour), pickle masala, mustard oil, lemon juice, ginger, coriander leaves, green chillies, and salt together. Now divide the dough, flatten to the desired size and place a spoonful of the filling. Close the dough by the edges and roll it into a ball.
Cook Litti in Appe Pan
Put the litti balls in Appe Pan and turn them to allow cooking from all sides. Apply the oil and cook for 5-10 mins based on gas or electric stove to get a crisp covering.
Bake Litti in Airfryer
Put the litti balls in airfryer and bake them turning both sides till it is cooked properly. Apply the little oil and cook for 10 to 15 mins @ 350F (180C) to get a crisp covering.
Raw Chokha Recipe
- Now to prepare the chokha, wash, dry and slit the brinjal.
- Put an aluminum foil on the baking tray and place the brinjal and tomatoes on top.
- Roast them on broil mode or highest temperature. Once done, peel the brinjal and tomatoes and then mash them well.
- Transfer these into a bowl. Add garlic, salt, mustard oil, lemon juice, green chillis and chopped green coriander leaves in the bowl. - Mix the ingredients well and the chokha is ready to be served.
Cooked Chokha Recipe
- Add oil to the pan along with ginger, garlic paster.
- Wait till it turns golden and then add turmeric, red chilli and heeng powder.
- Add boiled peas along with raw chokha (as directed above)
- Saute the mixture for 5 to 10 mins and the cooked chokha recipe is ready.
Litti Chokha Serving
- Transfer both the raw & cooked chokha’s in a serving bowl.
- Dip the litti balls in some melted ghee or butter and place along with the chokha.
- Add some salad and green chutney on the side.
- You can also serve this dish with some kadhi.
