Overview

Jowar (Sorghum) Pancake / Uttapam is super healthy weightloss breakfast that includes gluten free summer special jowar grain, urad dal, chana dal with a variety of seasonal vegetables. This protein rich uttapa does not include any rice/ rice flour/ poha.

Jowar is a highly nutritious summer special millet and it is easily available in all Asian stores. It really helps to keep body cool. Its very beneficial in weight loss since it is rich in fiber which keeps you full for the longer time. This grain is high in fibre, helping to shred those extra pounds (weightloss) and also offers many vitamins and minerals. Please include this grain in your diet which will keep you full for longer hours. This healthy millet’s dosa,upma can be served as breakfast, lunch or dinner with chutney (coconut or tomato) of your choice.

Fermentation of any millet or grain helps in better digestion since it is loaded with good bacteria which has potential probiotic effect. Thus fermented batter is always very easy to digest.It is very beneficial for people who have digestive issues or bloating.

Tips

  1. This recipe includes fermentation so meal prep is important. After fermentation of the batter is done, this recipe takes 5 minutes to cook.
  2. Jowar (Sorghum), Bajra (Pearl Millet), and Ragi (Finger Millet) are most common Indian millets of which Bajra is a winter crop while Ragi and Jowar are summer crops. Even though these days every millet is available all year round, choosing your grain according to season ensures you get their maximum benefits.
  3. Please use jowar (sorghum) flour as a millet which is easily available in any Asian or Indian store.
  4. You can also add cumin seeds (jeera), grounded flaxseeds in the batter to improve its health benefits. Also vegetables can be added according to your taste and season.

Ingredients

Preparation of lentils (Dal) mixture(Meal Prep)

  • Urad dal - 1/2 cup
  • Chana dal - 3 tbsp
  • Fenugreek seeds - 1 tsp
  • Water - for washing & soaking

Fermentation of batter (Meal Prep)

  • Jowar (Sorghum) - 1 1/2 cup
  • Lentils (dal) grinded mixture
  • Salt - 1/2 tsp
  • Water

Preparation of uttapam

  • Oil
  • Fermented batter
  • Chopped bell peppers
  • Grated carrots
  • Grated beets

Instructions

Preparation of lentils (Dal) mixture (Meal Preparation)

  • Add urad dal (whole), chana (bengal gram) dal, fenugreek seeds (methi) to bowl .

  • Wash all lentils 2 to 3 times until clean.

  • Once lentils are cleaned, soak it for 3 to 4 hours.

  • After 3 - 4 hrs, lentils (dal) is soft and ready for grinding. Grind lentils (dal) to form a smooth paste.

Fermentation of batter (Meal Prep)

  • Add jowar (sorghum) flour to a big bowl. Add water to the flour, little by little, at a time and mix it well. Since jowar quality differs in different places so the water to be added to the flour completely depends on the quality of sorghum flour. Water should be added to the flour until jowar paste has flowing consistency.

  • Add lentils (dal) mixture to jowar batter and mix well.

  • Add salt to the batter.

  • Rest the batter for 8-10 hours or overnight. Cover the bowl with a plate for the batter to bloom nicely. Do not use any tight lid to cover the batter as air is required for fermentation of batter.

  • After fermentation, the batter has become doubled its quantity. This super airy batter is loaded with nutritional good bacteria which really is very good for digestive system.

  • Mix the batter lightly and keep it in refrigerator for one week. The meal preparation is finished and breakfast is sorted for any hectic mornings within 10 minutes.

Preparation of Jowar (Sorghum) Uttapam / Pancake

  • Add oil to pan and grease it with a tissue.

  • Once pan(tava) is hot, reduce flame to lowest. Add one ladle full batter to pan and gently spread to make uttapams /pancake.

  • Add seasonal vegetables to uttapam. Here I added grated carrot, chopped bell peppers (colorful capsicum) and grated beets (beetroot).

  • Lightly dap the vegetables into the batter with the help of a spoon.

  • Flip uttapam / pancake so that it cooks on the other side.

  • Serve Jowar (Sorghum) Uttapam or pancake hot along with coconut or peanut chutney as any meal of the day. It keeps you fuller for lonegr hours.
