Dodha Barfi is a delicious and rich North Indian sweet made for festivals. It made with sprouted wheat, caramelized jaggery, mawa and many more things. In this post, I will share dodha barfi made with daliya or broken wheat.

Overview

Dodha Barfi is a traditional Indian sweet, which has a grainy and chewy texture, loved by kids and adults alike. It is mainly popular in Punjab, Haryana, Delhi and Gurgaon. You easily prepare it at home with sprouted wheat.

Every family have their own versions of Dodha Barfi sweet. My grandmother was originally from Punjab and she used to call this sweet as “Doda / Toda” Barfi. I have really sweet memories of this sweet as me and my grandma “Dadi” used to make this sweet together. She used to clean, wash and then sprout the wheat grains. It was a really tedious process but the end result was worth all the pains. I still remember that moist soft texture of barfi and it melted in my mouth. Yum!

Today in this post, I am going to share an easier yet same yummy taste of that barfi. Instead of using sprouted wheat, I am going to use daliya / broken wheat in this recipe.

Tips

I would like to share few tips and tricks for a perfect Dodha Barfi recipe.

  • In many parts of the world, broken wheat is not available. You can use bulgur wheat as its replacement.

  • Always use full fat or full cream milk to make dodha barfi.

  • Adding yogurt or curd to milk will curdle the milk. We need little milk solids to form in the milk, a little grainy texture to be more precise. Use fresh yogurt only to the milk.

  • Indian sweets are mostly made in ghee or clarified butter. Use ghee in this sweet too as ghee adds richnesss to the sweet.

  • Use of cocoa powder and color is completely optional in barfi. I used both of the ingredients to give it same halwai style color. If you do not want to add cocoa powder and color then just make the barfi white with daliya/broken wheat.

Ingredients

  • Daliya/Broken Wheat - 1/2 cup
  • Milk (full fat) - 1 litre or 4 cups
  • Yogurt or curd - 2 tbsp
  • Ghee or clarified butter - 1/2 cup or 80 gms
  • Cardamom powder - 5 to 6 pods
  • Sugar - 1 cup
  • Cocoa powder - 1 tbsp
  • Milk - to dissolve cocoa powder
  • Red food color - 1 pinch
  • Chopped almonds, cashews or nuts of your choice
  • Desiccated coconut - 1/2 cup

Instructions

Roasting of Daliya/Broken Wheat - Preparation Steps

  • Add broken wheat/daliya to a pan. Dry roast daliya for about 10 minutes till there is a mild aroma of daliya.
  • Transfer roasted daliya to a bowl.

Milk & Daliya - Preparation Steps

  • Add milk (preferable full fat) to a pan.

  • When milk comes to boil, add roasted daliya / broken wheat. Cook it on medium flame and wait for the next boil.

  • When daliya and milk mixture comes to boil again, add yogurt or curd to boiling milk. Stir milk after every 1 minute so that milk does not stick to bottom of pan.

  • Add desi ghee or clarified butter to milk as ghee gives richness to milk.
  • After 2 minutes, milk has started to curdle. You can see little lumps of milk formed. We have to cook milk until milk is absorbed and only little lumps of milk with broken wheat is left.
  • Milk starts to reduce. This process takes 25 to 30 minutes and flame should be medium.

  • Milk should be completely absorbed in daliya and little grains of milk are seen. This consistency is what we are looking at.

Cocoa Powder & Sugar - Preparation Steps

  • Add 5 to 6 cardamom pods and grind it with sugar. Sugar will be filled with beautiful aroma of cardamom.

  • Add cocoa powder to a bowl and add milk to it. Add red color to this mixture. Mix it together.

  • Add lemon juice. Mix well and cook for 5 to 7 minutes.

Dodha Barfi - Preparation Steps

  • Add sugar and cardamom mixture to daliya mixture.
  • Sugar will melt and daliya sweet will be liquid.
  • Add cocoa mixture to daliya. Mix well and cook it on medium flame.
  • Add desi ghee to sweet.Keep on stirring the mixture as it can stick on bottom of pan. Slowly mixture is turning glossy or shiny. In total, I have used ghee as 80 gms or little less than 1/2 cup. Keep adding ghee 2 tbsp everytime, stir the sweet and cook on low flame for 10 minutes approximately.
  • Add dry fruits/nuts to the mixture.
  • Add desiccated coconut to the mixture. Slowly dodha sweet starts to come together.
  • Take a baking dish or any plate. Grease ghee or oil to it. Add parchment paper to baking dish.

  • Add barfi mixture to baking tray. Apply ghee on the spoon. Level the dodha mixture in tray with the help of spoon.

  • Sprinkle almonds and cashews on sweet. Refrigerate dodha sweet for 1 to 2 hours.

  • After 2 hours, cut barfi and serve a piece in a small plate.
