Carrot Kheer Recipe is a rich and creamy sweetened dessert recipe made with grated carrots, makhana (FoxNuts), almonds and flavored with cardamom seeds. Carrot Kheer Recipe is simple and easy to make dessert and can be served warm or chilled with a topping of any nuts. This super healthy kheer is especially made and consumed during Navratri or any fasting days in India. The kheer (pudding) is super quick and easy to make and does not require tedious efforts of long duration standing for roasting/cooking of carrot halwa.

Tips

I would like to share few tips and tricks for a perfect carrot kheer recipe.

  1. Adding foxnuts (makhana) to kheer is completely optional. Makhana makes the consistency of kheer thick within 10 minutes.
  2. Sugar in the kheer should be added when kheer (pudding) is warm (not hot).
  3. Carrots is advised to be grated from small holes of grater. This helps carrots to easily become soft in milk.
  4. Also mawa/khoya can be added to kheer (pudding). This enhances taste of carrot kheer.
  5. Sugar can be adjusted according to your taste in kheer (pudding).
  6. Kheer (pudding) can be served warm or chilled according to your preference.

Ingredients

  • Carrot (grated) - 1 cup
  • Ghee - 1 tbsp
  • Milk- 2 cups
  • Almonds- 10-12
  • Makhana (FoxNuts) - 1/2 cup
  • Cardamom - 3 - 4 pods

Instructions

Carrot Kheer - Preparation Steps

  • In a heavy bottom pan or kadhai, add 1 cup of grated carrot to 1 tbsp of ghee. Saute it well for 4-5 minutes until grated carrots turn aromatic.
  • Add 2 cups of milk (full fat or full cream) to sauted carrots. Mix well and let it cook.
  • Take 1 cup of makhana (foxnuts) and 10-12 almonds, grind nuts in a grinder. A mixture of dry fruits will be ready. You can add any nuts of your choice. Also, adding makhana to milk will thicken the consistency of kheer quickly.
  • Add crushed / grinded makhana and almond mixture to kheer and let kheer (pudding) cook for 15 mins on low to medium flame.
  • Add elliachi dana (cardamom seeds) to kheer. This will enhance the flavor of the kheer.
  • When kheer is cooked turn off the flame. Let the kheer cool down.
  • When kheer (pudding) is warm (not hot) add sugar and mix well.
  • Serve the pudding warm or chilled according to your taste.
