Bubble Potato | Potato Snacks | 10 min recipe

Bubble potato also known as potato nuggets is a quick, easy 10 min recipe, super fun and popular snack for everyone.

Overview

Bubble potato recipe is purely an adaptation of nuggets and it is a huge success in almost every part of the world. Nuggets are very popular snacks that are served in many fast food chains. It is made with boiled potatoes, very basic spices, rice flour and cornstarch. The potatoes puff up when fried and its super crunchy. Also if you make potato dough as described in the recipe below, then many popular snacks like potato smiley or mccain potato nuggets can be made quickly and very easily. This recipe is a huge hit in parties and as tea time munchies. Kids love it and really request to make bubble potatoes more often (almost daily).

Tips

  1. Bubble potato can be prepared raw (without frying/baking) and kept in refrigerator for 10 days. This step can be done as a meal preparation.
  2. When mashing boiled potatoes, in absence of potato masher use a spoon or fork.
  3. In absence of strainer to sieve the potatoes, (sieving gives aeration and makes potatoes very light) use a garlic presser to press the potatoes through it. This garlic presser also gives same fluffy texture to bubble potatoes. In some countries, potato pressers are also available, you can try that too.
  4. In absence of rice flour, you can also use grinded poha in its place. That also adds crunchiness to bubble potatoes. But still I admit, rice flour works the best.
  5. While making potato dough, if you feel dough is quite dry. Please add little oil, this helps to remove dryness from dough and dough starts binding together.
  6. To check if oil is hot enough for frying: Take a wooden stick or kabab skewers and dip it in oil if small bubbles are formed oil is hot enough.

Ingredients

  • Potatoes - 2 big sized, boiled
  • Rice Flour - 2 tbsp
  • Corn Flour / Corn Starch - 1 tbsp
  • Salt - to taste
  • Black Pepper Powder - 1/4 tsp
  • Water for boiling potatoes
  • Oil for frying / baking

Instructions

Potato Dough - Preparation Steps

  • Boil potatoes for 10 - 15 mins or until soft. Alternatively, for reduce the time of boiling, cut potatoes in cubes and then boil. This will definitely reduce the boiling time.
  • Transfer boiled potatoes into a big bowl.
  • Use a potato masher (or a fork or spoon), mash the potatoes so that all lumps in potatoes are removed.
  • Keep a strainer/sieve on a bowl, put mashed potatoes on the strainer/sieve & sieve the mashed potatoes. Please note that sieve mashed potatoes in small batches. As discussed in Tips section, in absence of sieve, use a garlic presser to press the potatoes through it.
  • Add rice four, corn flour/starch, salt, black pepper powder and baking powder. Mix Well and form a potato dough.
  • Divide the dough into two parts. Take first part of dough. Sprinkle some rice flour on surface. Then roll dough into thin long dough balls.
  • Cut dough into 1 inch pieces.
  • Use fork to make design on all pieces.

Bubble potato - Frying

  • Pour oil into pan. Make oil hot on medium flame. To check if oil is hot enough for frying: Take a wooden stick or kabab skewers and dip it in oil if small bubbles are formed oil is hot enough.

  • Add bubble potatoes to oil. Gently move the spoon through oil since bubble potato pieces tend to stick with each other.

  • Fry bubble potatoes until golden brown.

Bubble potato - Baking

  • Preheat oven on 350F/180C.

  • Apply parchment paper on baking tray. Gently place bubble potatoes on baking tray.

  • When oven is preheated, place baking tray in oven for 30 mins or until golden brown.
