Cucumber Mojito is a non-alcoholic, super refreshing lemon mint flavored cucumber mocktail with coconut water.

Overview

Cucumber Mint Mojito is a super refreshing summer special mocktail. It is made with lemon, mint, cucumber, coconut water, soda, sugar and spice. This refreshing version of mint mojitos features a summertime kick of cucumber.

Today marks the first day of summer! I’ve decided to get creative and celebrate the start of summer a little differently, and a refreshing craft mojito made with summer ingredients is first on my list. I could not think of a better mocktail/mojito to start my summers as it’s classic combination of mint, lemon, sugar muddled up together topped with fresh cucumbers to beat the heat on those summer days.

Spelled as “j” but pronounced as “h” in Spanish. Mojito is a classic & popular Rum based beverage. I have created virgin version but you can make it with alcohol as well.

Tips

  • If you want a spicy version of cucumber mint mojito, you can always add a few slices of jalapeño and muddle it up with other ingredients. Alternatively, you can sprinkle some hot spices as red chilli powder or chaat masala.

  • While making some pre-preparations, you can muddle mint, lemon and sugar together and make the juice ready with pre-cut cucumber slices. When party hits, quickly mix lemon, mint mixture with cucumber slices, coconut water and run the show.

  • I have added coconut water and soda (soft drink) to mojito or mocktail. You can easily omit soda and only use coconut water for more healthier version of this mojito.

  • A highball glass is the traditional choice for a blue lagoon, however, many people like to use hurricane glasses or martini glasses.

  • Ice is required for every mocktails / mojito. So freeze ice cubes in advance. If you’d like ice anyway, that’s fine!

  • You can rim the glasses and apply honey in advance, and put green candy pieces on its rim. This step can be done in advance but wait to mix up the drink until right before serving. You don’t want the soda to lose its carbonation.

Ingredients

Preparation of Cucumber Mojito

  • Lemon/Lime - 1 regular sized cut into 5 to 6 wedges
  • Cucumber - 5 to 6 thin slices
  • Mint leaves - 5 to 6
  • Sugar - 2 tsp
  • Coconut Water
  • Soda or Soft drink
  • Green Mango Candy
  • Ice Cubes
  • Muddler

Instructions

Preparation of Cucumber Mojito

  • Take a green color candy (I used raw mango candy). Put the candy in a zip lock bag and press it with a muddler. SLowly candy will break down into very small pieces. Apply honey to the rim of the glass and then turn the glass upside down so that small pieces of candy stick to the glass. This step is completely optional.
  • Cut a lime or lemon into 5 to 6 smaller wedges.

  • Chop mint leaves so that it is easy to muddle and it quickly releases its juice into mojito.

  • Take a cucumber and peel its skin. With a vegetable peeler, peel very thin slices of cucumber.

  • Take a tall glass. Add mint leaves to glass.
  • Add lemon wedges (1 lemon is cut into 5 to 6 small slices) to glass.
  • Add sugar in the glass.
  • Take a muddler. If muddler is not there, you can use any stick or rolling pin to crush lemon and mint. Crush lemon and mint leaves to release its juice in glass.
  • Add black salt or any salt to mojito.
  • Add ice cubes so that 3/4th of the glass is filled with ice.
  • Add thin slices of cucumber to mojito.
  • Add coconut water to add the summer flavor to mojito.
  • Add any soda (soft drink) or sparkling water to create its sea green dazzling effect in mocktail/mojito.
  • Everyone will love its delicious citrus summer refreshing flavor!
